Wild Bowls

The weekend is near, mornings are getting colder and my body has been craving more comfort food lately as we enter the rainy season here in Antigua. This is one of my favourite Sunday morning dishes when I like to stay that little bit longer in bed. It is such a cosy dish and so easy to make at home ~ warm overnight oats, a thick maple beetroot syrup, crunchy granola and homemade peanut butter.

Best served in bed with a hot cup of tea easing into the day.

makes 1 portion 

INGREDIENTS 

half a cup of rolled oats

one cup of water

half a cup of oat milk 

cinnamon 

sea salt

TOPPINGS 

go wild :)

1 tbsp of peanut butter (Wild Daughter Pantry Shop)

1 tbsp crunchy granola (Wild Daughter Pantry Shop)

fresh berries or poached pear

Maple Beetroot Syrup

250ml freshly pressed organic beetroot juice 

2tbsp maple syrup

3tbsp sugar

twigs of fresh thyme

METHOD

  • mix the rolled oats and water together in a small bowl and leave to soak overnight to unlock all the nutrients and allow all the starches and sugars to be broken down into more digestible sizes for our body 

  • prepare the maple beetroot syrup by juicing fresh beetroot and mixing in the maple syrup and sugar in a cooking pot. bring the liquids to bubble over medium heat, turn down the heat and let the juice reduce and melt with all the maple flavours for about 10-15 minutes over low heat. you are looking for the liquids to become a little thicker. allow to cool down in a jar

  • the next morning add the oat milk, cinnamon and a tiny pinch of salt to the soaked oats and cook over low heat, stirring continuously for about 5 minutes until the oats have come together

  • spoon the warm overnight oats into a small bowl, add the dollop of homemade wild peanut butter, sprinkle the granola on top, add the maple beetroot syrup all over and top with some fresh berries or some poashed pear. add a little thyme on top to add complimentary colour and beautiful woody/minty flavour notes to the beetroot
